As I continue foraging through recipes, I've been focusing on meats. Honey and mustard combos specifically. I tried a honey mustard chicken last week, and refined the marinade on a pork tenderloin this past weekend. The marinade found its home. For sure.
There's fiesta night, and then there's FIESTA NIGHT! Carnitas tacos is about as good as it gets at our house. This recipe is mostly hands off because you put it in the slow cooker and forget about it (except that your house smells like delicious pork). Leftovers are great for quesadillas, taco salad, or pulled pork sandwiches.
For a special supper, slow-roast a pork shoulder. Start the roast in the morning, and it will be ready for dinner. The skin crisps to crunchy cracklings, and the meat melts with juicy tenderness. Serve it with carrots butter-steamed in a slow-cooker, then finished with cream and olives. Add sauteed kale or a frisee salad and bread to round out the menu.
