Chicken Salad

For a refreshing meal, Shirley Leister fixes this simple chicken salad with sweet cantaloupe. For a different presentation, the West Chester, Pennsylvania cook arranges the melon like flower petals on a lettuce-lined plate, then mounds the salad in the center.

Mashed Pumpkin Potatoes

This is my personal rendition on a favorite from Quebec. The addition of pumpkin to ordinary mashed potatoes gives them an nice earthiness that goes well with roasted poultry or other autumnal fare. I have not tried it with canned pumpkin but will experiment eventually. Though I don't cook much with butter, you should feel free to add some more to suit your taste.

Super Immunity Soup

Sniffles got you down? This soup is like a savory smoothie. It's fast, vegan and mostly raw. If you cook cruciferous veggies (like kale) and allium veggies (like onions), the nutrients are destroyed. But if you puree them together first, they chemically bind together making a superfood, as well as keeping all nutrients in tact even when heat is applied.

Bubble & Squeak

This version of bubble and squeak replaces the traditional Brussels sprouts or cabbage with peppery mustard greens, and uses potatoes that you cook specifically for this purpose. And the name? Well, that's just the sort of meandering my brain does when I am out walking Ginger -- it occurred to me that Colonel Mustard would need a hearty dish like this after a busy day of either solving or committing murders.

Shanghainese Lion's Head Meatballs

This is a recipe passed down from my great-grandmother on my father's side -- he missed these so much when my family came to the United States that he taught himself to cook just to make them again. They are, in many ways, the epitome of Shanghainese cooking: flavorful but not overwhelming, savory-sweet, with a bit of shaoxing wine for extra depth. Perfect warming comfort food. If you want a saltier or more intense flavor, increase the amount of soy sauce and sesame oil.

Eggs in Spicy Minted Tomato Sauce

This is a riff on shakshuka, the Israeli dish of eggs poached in tomato sauce. I love the combination of tomato, mint, and chili, especially with eggs. This is my go-to weeknight meal, because it's fast, cheap, and flavorful enough to feel really special. You can cook the eggs to whatever doneness you prefer; I like the yolks just barely set, so that they're still a little runny but don't dilute the sauce too much.

Chicken with Marsala, Mushrooms & Gorgonzola

There are two things about chicken breasts that every busy home cook should know. First, the possibilities are endless, and second, slicing boneless breasts on an angle and searing the slices over medium-high heat, makes for quick-cooking, golden brown, juicy chicken. We recommend serving this version of Chicken Marsala over mini penne, but any pasta shape will do.

Skirt Steak with Chimichurri Sauce

Tart, herbaceous, and absolutely addictive, Argentinean chimichurri sauce is the perfect match for the rich beefy flavor of skirt steak – or any cut of steak. Cook the steak over intense heat quickly to sear the outside while cooking the inside just to medium-rare. Then slice it thinly and serve with generous amounts of sauce. Here's a great way to use summer's abundant squashes. Toasted pine nuts and briny kalamata olives make this salad a standout. Prep and Cook Time: about 1 1/4 hours. Notes: Ingredients can be prepped and pasta cooked a day ahead of time and chilled (add 1 tbsp. extra-virgin olive oil to the cooked pasta). Toss everything together just before serving.

Almond Crusted Chicken

Hey Everyone! How are you liking my Healthy Habits blogs so far? Did anyone try out the GNC protein shake I recommended? As promised in my Healthy Habits: My Typical Meal Plan post, here is the recipe for my all-time favorite meal for dinner: almond chicken. It's super healthy and it's really easy to make (remember, if I can make it anyone can). I found this recipe online over a year ago and have been loving it ever since! It makes me think I'm eating fried chicken fingers, but it's actually just healthy chicken breast breaded in wheat flour and almonds. Put it this way-my 8 year old sister devours these like she would a McDonalds Happy Meal, but they're healthy! I make this recipe at least once a week. It keeps well for a few days in the fridge so I usually just heat them up on a cookie sheet in the oven when I want the leftovers. I cannot explain how yummy it is to eat yet easy it is to make. Like I said, I've made it at least once a week for over a year now (OK, I'll admit it, it's one of the only things I actually can cook) so it's like second nature for me to whip these up. Here's the whole recipe (serves 4) courtesy of EatingWell.com:Ingredients Canola oil cooking spray 1/2 cup sliced almonds 1/4 cup whole-wheat flour 1 1/2 teaspoons paprika 1/2 teaspoon garlic powder 1/2 teaspoon dry mustard 1/4 teaspoon salt 1/8 teaspoon freshly ground pepper 1 1/2 teaspoons extra-virgin olive oil 4 large egg whites 1 pound chicken tenders Instructions Preheat oven to 475
