Mascarpone (mah-skar-POH-nay) is a mild, buttery cow's milk cheese. In this dessert, egg whites are used to make baked meringue cups. The cooled meringues are filled with mascarpone-cocoa mixture and topped with fresh raspberries.
My kids love this unusual snack--and I like that it's healthy, Coated with Italian seasoning, Parmesan cheese and garlic salt, the veggie sticks are broiled so there's no guilt when you crunch into them. --Mary Murphy of Atwater, California
This savory deep-dish pie features herbed feta cheese that melts and mingles in every bite. The cheese is sauteed and mixed with spinach, mushrooms, Cheddar cheese and lots of garlic. This mixture is then combined with milk and eggs, and poured into a prepared crust. A bit more Cheddar cheese is sprinkled over the top, and then the quiche is slipped into the oven until it 's set.
It's taken me several years to perfect this recipe. Now everyone asks, 'When are you making the eggnog?!!' This uses cooked eggs for safety, and you can use more or less rum to taste. It's a bit of work to make, but well worth it. You'll never buy store-bought eggnog again! Enjoy!
