Mexican tortas are delicious, but messy. This sandwich, inspired by the same flavors, solves that problem by packing them all into a bread boat and pressing them under heavy weights until they form a single, intensely flavorful package with juicy pork, pickled onions, jalapeu00f1os, beans, and gooey melted Oaxaca cheese.
Look for caper berries near the olives in the supermarket; they should be next to the capers, but they're much bigger and have a stem. In a pinch, substitute about a tablespoon of chopped capers. Japanese eggplants have thinner skins than typical globe eggplants, so you can leave the peel on. The light purple color is pretty, too.
These have to be, hands down, the BEST meal I have EVER made in a crock pot. I borrowed a friend's crock pot one weekend and made this for my honey. Low and behold, I got a crock pot for my next birthday along with a request for this recipe to be the first thing I made.
