Savory sausages and tender cubes of chicken leap into a saute pan with onion, garlic, bell peppers, tomatoes, mushrooms and zucchini. Toss with hot pasta and serve with a sprinkling of grated Parmesan, if you wish.
This spicy dish combines fresh zucchini, rice, beans and cayenne pepper to really spice up your summer. You may wish to adjust the spices to your taste- we like it hot! Serve with tortillas on the side to scoop up all of the goodies.
Beginning with my Fast Chicken Soup Base it is easy to knock hours off of the cooking time usually needed for homemade chicken soup and still end up with soup that tastes even better than the 'from scratch' method. With a little creativity you can easily make two varieties of these soul-satisfying meals.
Get out your grater or food processor, you'll need to grate up a bunch of zucchini. But this is what makes these patties fry up so wonderfully. A nice change from potato pancakes. Serve with a bit of tomato sauce or sour cream dabbed on top.
