'My daughter created this soup when she needed to use up some leftover pork,' explains Eleanor Niska from Twin Falls, Idaho. 'More water can be used for a thinner soup or less water for a noodle dish. It's good with mushroom flavored ramen noodles, too.'
Start with a skillet and finish with a slow cooker. A saute of onion, garlic and ground beef is simmered with tomato and oregano, then layered in a slow cooker with raw lasagna noodles and a creamy blend of cottage cheese, Parmesan and mozzarella.
Use any combination of nuts and seeds. This salad would also be good with sliced bell pepper or shiitake mushrooms. Serve as an accompaniment to pepper steak or pork chops glazed with hoisin sauce. Look for the wheat noodles labeled as plain for this salad.
Bake the potatoes and shred the cheese the day before making the soup. If the soup needs to simmer awhile on the stove, you may need to add more chicken broth.
