Soak the beans for at least 6 hours, or overnight. After soaking, thoroughly rinse the beans under running water until the water runs clear.  After the initial soaking, beans will double or triple in size. To cook the beans: Place the beans, onion, bay leaf, garlic, and chipotle in a medium pot. Cover with a couple inches of water. Place the lid on, bring to a boil, reduce to a simmer, and let it go for about 40-70 minutes, depending on the age of your beans. Serves 6 Ingredients: Ree | The Pioneer Woman Main Courses 2 Tablespoons Olive Oil 2 Tablespoons Butter 3 cloves Garlic, Minced 1/2 whole Medium Onion, Finely Diced 1 can Artichoke Hearts (14.5 Oz. Quartered Or Whole) Drained 1 can Diced Tomatoes With Juice (14.5 Oz.) 1 cup Heavy Cream 1/2 cup Chicken Broth (More As Needed) 1/2 teaspoon Nutmeg Salt And Pepper, to taste 1 pound Thin Spaghetti 1 cup Parmesan Cheese, Freshly Grated 2 Tablespoons Fresh Chives (or Other Herbs) Chopped Instructions: Cook spaghetti till al dente.
