So Vegetarian is almost an unheard of word in the Philippines, but while in college I still wanted the Filipino tastes while trying to be vegetarian. Since all of the recipes I know had meat (even the veggies are cooked in pork) I had to come up with some of my own. This is one of those. Tofu sinigang apparently isn't unheard of in the Philippines but this recipe came out of trial and error. The soup is pretty sour cooked to quot;full strengthquot; but can make a pretty nice fast meal with rice.
Neufchatel cheese is added to spaghetti sauce to make a creamy sauce that's tossed with pasta and broccoli, then served with chicken breasts simmered in a robust dressing.
The smartest thing you can do with this low-cal, low-fat meal is eat it with the people you love. This better-for-you ziti is still filled with cheesy goodness.
Literally, SIX freakin' cans!! (It has been brought to my attention that there are only FIVE freakin' cans. Ooops, sorry. Usually I don't have a problem counting to five, but there you go. Enjoy the recipe anyway!)
A Southwestern cousin of mom's chicken soup, this one has a little more kick with a crispy topping. And, like its best-loved relative, it'll make you feel good all over.
