8 cups cold water
2 tablespoons extra-virgin olive oil
1 medium-sized yellow onion, fine diced
1 small carrot, peeled and diced
1 rib celery, diced
1 red pepper, diced small
1 teaspoon cumin seeds
1 teaspoon ground coriander
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper
4 garlic cloves, fine diced
8 ounces tomatoes (at this time of year, buy canned San Marzano tomatoes), with juice
1 teaspoon kosher salt (with more, to taste, at the end)
1 teaspoon black pepper
1 tablespoon fresh ginger, peeled and fine diced
1/4 cup sour cream
2 tablespoons chopped cilantro
