10 oz. frozen spinach, thawed and well drained
2 1/2 slices of whole wheat bread, processed into fresh crumbs
1 tsp. (or more if you like) Creole or Cajun seasoning (I use Tony Cachere's Creole Seasoning )
Kosher salt and fresh ground black pepper, to taste
