8 oz lasagna noodles (I use brown rice noodles, you can also use whole wheat noodles)
2 tsp healthy oil / fat of your choice
1 onion, finely chopped
1 carrot, finely chopped
2-4 stalks celery, finely chopped
8 oz mushrooms, sliced
1 clove garlic, minced
2 Tb fresh sage leaves, chopped
4 pinches Kosher / sea salt
fresh ground pepper to taste
2 pinches dried thyme
2 big handfuls of baby kale or chopped fresh kale
1/2 cup chardonnay
3 Tb cornstarch
15 oz canned pumpkin puree
1 cup vegetable broth (homemade or high quality organic)
1/2 cup half and half
1/2 cup grated parmesan cheese
1 cup shredded mozzarella cheese
1 1/2 cups ricotta
