Beef Tongue
Meat
1 beef tongue (or other tongue)
1 to 2 Tbs. pickling spice
1 onion, peeled and quartered
3 to 4 cloves garlic, peeled
2 Tsp. sea salt
water
Makes 1 tongue. Put tongue in stockpot or crockpot. Add pickling spice, onion, garlic and salt. Pour water to fully immerse tongue. If using crockpot, cover and let cook for 10 to 12 hours on low or 5 to 6 hours on high. If using stovetop, cover and bring to a boil, then reduce to a simmer for 4 to 6 hours. The tongue is done when skin peels off easily.
When done, transfer tongue to a bowl. (Discard cooking water and ingredients). When it is cooled enough to handle, peel away the skin. It will come off very easily. Discard the skin. Chill the tongue and then slice. Or slice when warm and serve warm. You can also dice the tongue and include it in skillet dishes.
