Beef Heart
Meat
Serves 5 to 7
1/4 cup butter
1/2 beef heart, cut into bite-size pieces
1 onion, diced
3 cloves garlic, crushed
sea salt
pepper
2 Tbs. balsamic vinegar (or soy sauce)
stock (optional)
Melt butter over medium heat in a deep cast iron skillet. Saute beef, onion and garlic until beef is browned, but do not overcook. Season to taste with salt and pepper. Add vinegar. Add additional stock as needed for more sauce. Serve over cooked brown rice.
