Basic Soaked Pancakes
Breakfast, Snacks
(Makes 30 pancakes)
2 1/2 cups (275 g) whole wheat pastry flour
2 1/2 Tbs (37 mL) raw apple cider vinegar
1 1/2 cups plus 2 cups (820 mL) raw milk
2 Tbs (30 mL) melted unrefined coconut oil
1 tsp (5 mL) Vanilla extract
2 tsp (10 mL) aluminum-free and non-gmo baking powder (corn-free if necessary)
1/2 tsp (2.5 mL) baking soda
1 tsp (5 mL) unrefined sea salt, fine
real maple syrup, grade B
additional grass-fed butter or unrefined coconut oil - for pan and toppings
Combine flour, apple cider vinegar and milk in mixing bowl. Cover and let rest overnight, at least 8 hours.
After rest time has elapsed, preheat griddle or skillet to medium-high. Grease.
In mixing bowl add oil, vanilla, baking powder, baking soda and salt. Mix. Add additional milk, 1/2 to 1 cup at a time to achieve a pancake patter consistency.
Pour batter onto skillet, about 1/4 to 1/3 cup each pancake, or desired size. Flip when top is covered with bubbles. Brown on second side. Remove from pan and serve with additional butter or coconut oil and maple syrup.
