Slow Cooker Balsamic Chuck Roast

Ingredients
3-lb chuch roast, cut into 2-inch pieces
1 tsp salt
1 tsp pepper
2 T olive oil
2 sweet onions, sliced
2 carrots, chopped
1 cup beef broth
8 oz tomato paste
2 cloves garlic, minced
2 T balsamic vinegar
1 T Montreal steak seasoning

Directions
  1. Sprinkle beef with salt and pepper. Saute in a hot oil in large skillet over medium-high heat 6-8 minutes or until browned.
  2. Transfer beef cubes to slow cooker.
  3. Add onions, carrots, broth, tomato paste, garlic, vinegar, and steak seasoning; stir gently to mix.
  4. Cover and cook on LOW 6-7 hours or until beef is tender.
