Ingredients
1.5 pounds mild Italian sausage, casings removed
1 large onion, diced
3 cloves garlic, minced
3 carrots, peeled and chopped
8 cups beef stock (or 8 cups water + 2.5 T better than bouillon
1.5 tsp Italian seasoning
1.5 tsp parsley
1 tsp salt
1/4 tsp freshly ground black pepper
12 oz tomato sauce
28 oz can diced tomatoes with juice
5 cans cannellini beans, drained and rinsed
12 oz frozen baby kale or spinach
Grated Parmesan cheese
Directions

Sauté Italian sausage. Add onion and garlic and sauté briefly. Drain.

Put sausage mixture in the crock pot. Add remaining ingredients except for kale and beans.

Cook on low for 8-10 hours or high for 4-6 hours.

30 minutes before eating, stir in kale. Serve with Parmesan cheese.
