Ingredients
1 lb. ground pork
Generous pinch of salt
2 bags of tri-color cole slaw mix
1 medium onion
4 cloves minced garlic
4 stalks green onions, chopped
1 tsp ground ginger
1 tsp fresh ginger, grated
1/4 cup soy sauce
Directions

Brown the pork in a large frying pan. Use a generous pinch of salt, to taste. While meat is browning, chop onion and mince garlic.

Add chopped onion and sesame oil. Cook until onions are translucent.

Add garlic, ginger, and soy sauce to the pan. Stir. Add cole slaw mix and stir to incorporate completely.

Cook for a few minutes, stirring often, so that it doesn't burn, and so all cabbage slightly wilts and reduces in size. I like to leave the vegetables "al dente," or with a slight crunch to them.

Remove from heat, add green onions.
Serve with deli egg rolls for those not on plan.
