Ingredients
4 cups frozen broccoli, diced
1 cup water
1/2 cup sesame oil, divided
1 lb. chicken breast, cubed
6 green onions, sliced
1 large carrot, grated
4 cloves garlic, minced
2 heads cauliflower, shredded
3/4 cup soy sauce
6 eggs, beaten

Shred cauliflower and carrot with a large cheese grater.

Beat eggs in a cup. Cube chicken.
Directions:
(30 minutes)

Boil 1 cup of water in a large saucepan. Add broccoli. Steam for 7-8 minutes.

Heat 4 T sesame oil in large skillet over medium-high heat. Cook chicken in hot oil. Move chicken to a plate.

Heat remaining sesame oil in the skillet. Saute carrot and garlic until softened. Add cauliflower and saute another 5 minutes or so.

Return chicken to the skillet. Add soy sauce.

Push mixture to side of pan. In the empty side, pour beaten eggs an scramble. Mix all together.

Serve over cooked broccoli.
