Betty's Pasta Sauce

Ingredients:
2 lbs. sweet Italian sausage (if desired).
1 medium onion chopped
4 garlic cloves minced
1-28 oz. can diced tomatoes
2-6 oz. cans tomato paste
2-15 oz. cans tomato sauce (I sometimes use Rao’s jarred Homemade Pasta sauce. Just whatever I have).
2 cups water (for a long period of simmering for flavors to blend. If simmering less time, add less water.
3 -4 tsps. Fresh basil
2 taps. Fresh chopped parsley
1 1/2 tsp. Brown sugar
1 tsp. Salt
1/4 to 1/2 tsp. Red pepper flakes.
1/4 ground black pepper.
1/4 cup red wine.
Fold in 2-3 Tbsps. Olive oil or
Butter.
DIRECTIONS:
In heavy pot brown sausage, if using, breaking up as you stir.
Add onion and continue to cook stirring occasionally til onion soften.
Add garlic, tomatoes, brown sugar, salt, red pepper and black pepper. Stir well and barely bring to a boil. Stir in red wine.
Simmer on Low, stirring frequently for at least an hour. A longer simmer makes for a better sauce. Don’t burn.
