Shredded Pork Quesadilla

3 oz Shredded Pork
1/2 cup Mozzarealla (or Monterrey Jack Cheese)
1/4 cup fresh salsa
2 6 or 8 inch flour tortillas
Fresh Salsa
Sour Cream

In a skillet over medium heat, place one of your tortillas. Top with half of the cheese. Sprinkle the salsa as evenly as possible over the cheese. Then distribute the pork evenly on the top as well. Top with the remaining cheese. Place the second tortilla on top of the filling.

Let cook until the bottom layer of cheese is melted. Then carefully using a spatula, flip the quesadilla over. You can use your hand to help keep the quesadilla together while flipping.

Once the cheese is all the way melted, remove to a cutting board and cut into fourths. Serve with fresh salsa, sour cream and guacamole-if desired.
