Vanilla Pudding (Peanut Butter)
2 T cornstarch
1/8 teas. salt
2 c milk (coconut or almond)
1/4 c honey
2 egg yolks, slightly beaten
2 T butter
2 teas. vanilla

In medium saucepan, combine cornstarch and salt. Gradually stir in milk. Add honey. Over medium heat, bring mixture to a boil, stirring constantly. Boil for one minute. Remove from heat. Slowly whisk half of the hot mixture into the egg yolks. Return egg yolk mixture back into the pan. Place back on medium heat. Bring to a boil and boil for one minute. Remove from heat and stir in butter and vanilla.

** Make peanut butter pudding ** Omit butter. Add 3 tablespoons of peanut butter at the end. Stir until smooth.
