Chicken Taco Salad

1 chicken breast, cut into cubes or strips
Taco Seasoning
1 Tbsp Oil (Canola or Olive)
1/2 cup Salsa (from a jar)
1/2 cup sour cream
2 Tortilla Bowls or Tortilla Chips
3 cups Lettuce, torn into pieces
1/4 cup Olives, sliced
1/2 cup Mozzarella Cheese, Shredded
2 slices red onion
Cucumber slices
1 medium Tomato, chopped

Sprinkle chicken with taco seasoning. In a skillet over medium to medium-high heat, cook chicken in oil until no longer pink in center (should be about 165 degrees as measured with a meat thermometer.)

In a bowl combine the salsa and sour cream. Set aside.

Place 1.5 cups lettuce into each tortilla bowl. Top with half of the olives, red onion, cucumber, tomato, cheese and cooked chicken.

Drizzle with salsa & Sour cream mixture.
