Spanish Rice
Main Dish
4 slices bacon, chopped
1/4 cup diced onion
1/4 cup diced green pepper
1 can diced tomatoes (i like to use Italian style)
3 cups cooked brown rice
salt and pepper (to taste)

Saute bacon until crisp. Remove from pan with a slotted spoon onto paper towel to drain. Saute onion and green pepper in bacon drippings until soft, remove from pan.
Combine all ingredients in greased 2 quart casserole dish. Top with cheese if desired. Bake at 350 for 30-40 min until hot.
