Basic Cheese Sauce
American
1 Tbsp Butter
1 Tbsp All-Purpose Flour
Pinch Pepper
Other spices as desired
3/4 cup Milk
1-1/2 cups shredded cheese, brought to room temperature

Melt the butter in a saucepan over medium heat, add 1 Tbsp flour and a pinch of pepper and other spices if desired. Whisk flour and butter together until fully combined.

Let cook for about a minute once the flour is fully incorporated. Add 1/4 cup milk to the pan and let it come to around the same temperature as the butter/flour mixture. Once the milk is warmed, mix until combined.

Then add 1/4 cup more milk and bring to temperature, then whisk until combined - being sure all the lumps are out. Finally, add the rest 1/4 cup milk and whisk to combine.

Add 3/4 cup cheese to the white sauce and whisk until cheese is mostly melted. Then whisk and stir the remaining cheese into the sauce. Once the cheese is all the way melted, turn off the burner so as to not overcook the cheese.

Keep the sauce warm until it is used! If skin develops, simply stir back into sauce.
Notes:
This cheese sauce can be used for baked potatoes (you can make broccoli cheese sauce by simply adding some finely chopped broccoli to the sauce), Stove-top mac and cheese, for topping veggies or rice.
