Beef Fajitas

8 oz steak, cut into strips
2 Tbsp Olive Oil
1/8 cup water
2-3 Tbsp Fajita Seasoning, divided
1 large onion, sliced
3 bell peppers, seeded and sliced (any color combination)
4 - 10 inch flour tortillas
Toppings (optional):
Sour Cream
Shredded Cheddar, Colby Jack or Monterey Jack Cheese
Lettuce, washed, dried and chopped

In a large skillet over medium high heat, add 2 Tbsp oil and cook the steak strips in the oil until completely cooked. Add water and 1 Tbsp fajita seasoning. Coat beef in fajita seasoning and let the liquid cook off. Then remove beef from pan and set aside.
Next add the onions and bell peppers to the pan. Cook until crisp-tender, or to your desired done-ness. Then add 1-2 Tbsp Fajita Seasoning and a bit of water if needed. Stir to coat and let cook 1-2 more minutes. Remove from heat.
To assemble, place tortilla on a plate. Spread on a layer of Sour Cream and/or guacamole. Top with a layer of bell pepper and onion mixture. Then top with some of the beef, cheese, tomatoes, and lettuce. Wrap tortilla around filling.
