Gluten Free Blondies

1/4 cup butter
1 cup brown sugar
1 egg
2 T milk (coconut or almond)
1 teas vanilla
1 cup gluten free flour
1 teas baking powder
1/2 teas salt
1/4 teas xanthan gum
*Optional:  add 1/2 cup of nuts or coconut

Melt the butter in a medium saucepan over low heat. Remove from heat and stir in brown sugar, egg, milk and vanilla. Combine dry ingredients in small bowl, add to sugar mixture and stir to comibine. Pour batter into a greased 8x8 pan and bake at 350 for 25 min. Let it cool before cutting.
