Lemon Feta Chicken

4-6 Boneless Skinless Chicken Breasts (I have used bone in fine)
3-4 Tbs Lemon Juice (depending on how many breasts you are making)
1/4-1/2 Cup Crumbled Feta Cheese (any variety works)
1 Tsp Dried Oregano
1/2 Tsp Pepper

Seriously Don't measure! Who needs to clean an extra measuring spoon. Put your Chicken Breasts in a sprayed pan (I've even done it with them frozen and just cooked them a little longer, but don't tell), squeeze lemon juice over the top, sprinkle crumbled feta over the top (as much or as little as you like), sprinkle with dried oregano and pepper.

Throw in the oven @ 400 degrees and cook for 20 to 25 minutes.

The fact that you just top and bake makes it a great dish if you are feeding 1 or if you are feeding 10. I love it! And it's good.

Notes:
Great if you are feeding one or ten. Quick Throw together dinner that looks much more involved.
