Swiss Steak

Ingredients
1 pound boneless beef round steak, cut 3/4 inch thick
2 tableslpoons flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cooking oil
1 can diced Italian-style tomatoes, undrained
1 small onion, sliced and separated into rings
1 stalk celery, sliced
1 medium carrot, sliced
2 cups hot cooked noodles, rice, or mashed potatoes

Directions
  1. Trim fat from the meat. Combine salt, pepper, and flour. Use the bumpy side of a mallet to pound flour mixture into the meat.
  2. In a large skillet, brown both sides of the meat in oil. Place meat in the bottom of a 5-quart crock pot. Add tomatoes, onion, celery, and carrot. 
  3. Cook on low for 8-10 hours. Serve over noodles, rice, or potatoes.
