This recipe is one of my favorites for breakfast, lunch, dinner or snacking. It is made with really healthy ingredients and tastes delicious. I found the recipe at http://www.100daysofrealfood.com. I didn't have to change the recipe at all as it is already a REAL Food recipe. I do like them a little sweeter at times, so I will throw in the 3rd banana. I get excited every time I have bananas that are getting over ripe because that means it is time to make pancakes. They freeze well too so I have them handy for busy mornings. They can be reheated in the microwave or toasted.
Ingredients

2 cups whole wheat flour

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 tablespoon honey

2 eggs

1 3/4 cup milk

2 tablespoons butter

2 or 3 ripe bananas, smashed
Directions:

Mix together flour, baking powder, baking soda, and salt.

Pour in the honey, eggs, milk and 2 tablespoons of melted butter into the center of the dry mixture. Mix together, but don't over mix. You don't want it to be too tough.

Gently fold bananas into the mixture.

Heat pan over medium-high heat. Melt butter to prevent pancake from sticking. Also gives a nice flavor.

Add pancake batter by pouring or ladling into the pan.

Brown the first side, flip and repeat.

Serve with warm maple syrup. (The Real stuff!)
